On the palate you get prominent dark cherries and blackcurrant with hints of pepper and red liquorice. Dóldora is a juicy, spicy red wine made from Saperavi. Saperavi is an ancient grape with a reputation for producing full-bodied, hearty wines. In producing Dóldora however, Constantin and Roman chose to just take the edge off, by gently crushing and then cold soaking the grapes. After destemming and crushing, alcoholic fermentation takes place in stainless steel tanks under controlled temperature. A long post-fermentation a cold maceration follows, after which the free-run wine is separated and the remaining pomace gently pressed.
