Dóldora has a light mouthfeel with velvety tannins and ripe aromas of dark fruits. On the palate you get prominent dark cherries and blackcurrant with hints of pepper and red liquorice. Dóldora is a juicy, spicy red wine made from Saperavi. Saperavi is an ancient grape with a reputation for producing full-bodied, hearty wines. In producing Dóldora however, Constantin and Roman chose to just take the edge off, by gently crushing and then cold soaking the grapes. The result is a complex, fruity and smooth wine that pairs magnificently with food but has more than enough main character energy to be enjoyed on its own.

Grapes are manually harvested at full phenolic ripeness and carefully transported to the winery. After destemming and crushing, alcoholic fermentation takes place in stainless steel tanks under controlled temperature. A long post-fermentation a cold maceration follows, after which the free-run wine is separated and the remaining pomace gently pressed. After a few weeks, malolactic fermentation is initiated to ensure smoothness and balance, avoiding any harsh notes.
