This light orange has delicate notes of apricots, honeysuckle, fresh herbs and a pleasing minerality on the finish. Balido means ‘bleating’ in Spanish - a nod to the sheep that roam the vineyards whilst the vines are dormant - and whilst Trebbiano makes up the majority of the liquid, it gets its signature amber glow from the Petit Manseng skins. Trebbiano bunches are destemmed over the tanks and kept in maceration along with Petit Manseng skins for 90 days to add textures, aromas and for natural clarification. Fermented with selected native yeasts. Bottled unflitered with minimal handling.

Cerro Chapeu is a Bodega deep in the Uruguayan Pampas, on the border with Brazil. Here, nature reigns supreme, and Pía and Piero Carrau, the newest generation leading Cerro Chapeu, treat their environment with the respect that their grandfather did when first planting the vines. Local flora and fauna thrive untouched, other than by the sheep who wander among the vineyards.
